Job Summary:

The Head Chef directs all activities of the kitchen in cooperation with the General Manager. We are an authentic Italian restaurant company providing excellent training, growth potential, employee recognition and a great benefit package. Requirements:
  • Minimum of 5 years of experience as a Chef (Italian cuisine is a bonus) with $4+ million annual sales in full-service upscale restaurant.
  • Knowledge of and ability to use inventory systems, controls and analysis.
  • Knowledge of and ability to control labor cost, systems and analysis.
  • Knowledge of Microsoft Office (Word, Excel, Outlook)
  • Fluent use of the written and verbal English language.
  • Strong initiative, ability to work on your own and direct others.

Overview of Duties:

  • Conducts interviews and hires all kitchen exempt, non-exempt and hourly kitchen personnel, may complete new hire paperwork and conduct orientation of new employees.
  • Trains and schedules exempt and non-exempt kitchen management employees. Terminates and disciplines all back-of-the-house employees.
  • Budgets and manages kitchen labor costs and processes payroll and accounting paperwork for the kitchen.
  • Supervises sous chefs and other kitchen personnel engaged in the daily preparation, cooking and presentation of food items. Ensures all ordering, receiving, cooking, preparation and presentation of food for all stations meet recipe standards.
  • Oversees and supervises daily shift responsibilities of all back-of-the-house staff ensuring 100% guest satisfaction. Conducts shift line-ups.
  • Estimates food consumption and purchases foodstuffs in accordance with standards of quality, freshness and cost specifications. Receives merchandise and processes invoices for timely payment.
  • Purchases and maintains efficient working order of kitchen equipment and supplies.
  • Maintains a safe and hazard free work environment; ensures thorough safety training of all kitchen personnel.
  • Monitors and maintains the cleanliness, safety and sanitation of the kitchen, storage areas and surrounding areas and assigns duties as necessary; ensures thorough safety training of all personnel (physical and product).
  • Responsible for daily, weekly, monthly staff schedules, schedule forecasting, printing and analysis on the computer ensuring compliance with location budget.
  • Conducts daily, weekly, monthly inventory and analysis. Responsible for invoice tracking, coding and log book.
  • Ability to analyze, make recommendations and develop strategic plans based on weekly operating reports and monthly profit & loss statements,
  • Oversees maintenance and sanitation of kitchen in accordance with health standards. Schedules necessary repairs and maintenance.
  • Works as a team player; assumes a pleasant and helpful attitude toward guests, vendors and staff members to ensure guest satisfaction. Exemplifies the company's core values of honesty, integrity, respect, commitment and quality fanaticism.
  • Carries out all supervisory duties in accordance with company policy and procedures and all applicable laws.
  • Upholds 5-Star Service Standards.
