Production Baker / Pastry ChefWe are looking for an experienced Baker and or Pastry Chef to prepare a variety of desserts, pastries or other sweet goods. Your skill in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes. The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving. The goal is to enhance customer satisfaction so that we can maintain and expand our clientele.ResponsibilitiesPrepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipesBake and decorate wedding and Birthday cakes (please bring portfolio of Wedding/Birthday cakes you have made to interview) is a plusCreate new and exciting desserts to renew our menus and engage the interest of customersDecorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and excitingExperience working with chocolateMonitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budgetCheck quality of material and condition of equipment and devices used for cookingGuide and motivate pastry assistants and bakers to work more efficientlyIdentify staffing needs and help recruit and train personnelMaintain a lean and orderly cooking station and adhere to the Requirements of health and safety standardsCommunicationMentor and challenge employees to focus on development and growthKeep FOH employees updated on food safety and allergy guidelinesUtilize communication tools (Memos, Manager's log, Bulletin Board, Email, etc.) to keep staff informed of any changes in company policies or proceduresRequirementsMust be able to work early shifts 4AM - 10AMProven experience as Pastry Chef, baker or relevant roleGreat attention to detail and creativityOrganizing and leadership skillsWillingness to replenish professional knowledgeIn depth knowledge of sanitation principles, food preparation and baking techniques and nutritionWorking knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)Certificate in culinary arts, pastry-making, baking or relevant field is a plusNecessary Knowledge, Skills and AbilitiesNecessary Knowledge, Skills and AbilitiesHigh school diploma or equivalentProfessional and proficient verbal and written communication skillsKnowledge of Microsoft Word and Excel applications, knowledge of back office POS operating systems and general accounting practicesServSafe certificationWork Schedule8 hour shiftWeekend availabilityDay shiftBenefitsHealth insurance401(k) matchingPaid time offShadowbrook Restaurant - Capitola1750 Wharf Rd, Capitola, CA, 95010
