“Director on Duty” from 6:30 am - 10:00 pm, there will always be a Director on and scheduled to oversee the entirety of the FOH and BOH Operations. Supervisors and managers will still be running their shifts, but this Director will be floating, auditing, coaching, helping fix bottlenecks, and whatever else is needed to ensure our guests are getting the best possible service.
